How to smoke foods on a charcoal gill?

 

  1. Prepare the Charcoal: Arrange the charcoal in the grill, using a charcoal chimney or similar tool to light them. Let the charcoal ash over before spreading them evenly in one section of the grill.

  2. Add Wood Chips or Chunks: Soak wood chips or chunks (like hickory, apple, mesquite) in water for around 30 minutes. Drain them and place them directly on the charcoal or in a smoker box to generate smoke.

  3. Set Up Indirect Heat: For smoking, set up the grill for indirect heat by placing a drip pan filled with water or another liquid on the side opposite the charcoal. This helps maintain moisture and catches drippings to prevent flare-ups.

  4. Preheat and Adjust the Temperature: Preheat the grill to the desired temperature. For smoking, aim for a lower temperature range, generally between 225°F to 275°F (107°C to 135°C). Adjust the vents to control airflow and temperature.

  5. Prepare the Food: Season or marinate the food you want to smoke. Ensure it's at room temperature for more even cooking.

  6. Place Food on the Grill: Place the food on the grill grate opposite the charcoal, positioned over the drip pan. Close the lid to trap the smoke and maintain the desired temperature.

  7. Monitor and Add More Smoke: Keep an eye on the temperature, and periodically add more soaked wood chips or chunks onto the charcoal to keep the smoke going.
